At Pig and the Pelican we are passionate about crafting delicious, high-quality local fusion that creates common bond. Our food truck is inspired by Florida's seemingly boundless coast lines and it's sub-tropical bounty.
Born and raised between Florida and Georgia, my story starts with salt air, citrus groves, and a deep love for the bold, diverse flavors that define both states. Florida isn’t just where I’m from—it’s the foundation of how I cook, how I create, and how I bring people together through food.
With over 20 years in the culinary world, my journey has taken me far beyond the coastlines of home. I spent the majority of my career in New York City, sharpening my craft in one of the most demanding and inspiring food scenes in the world. From leading kitchens as a chef to operating at a high level as a global food program manager, I’ve built a career rooted in precision, creativity, and an obsession with flavor.
But no matter how far I went, Florida kept calling me back.
Pig & The Pelican is the result of that pull—a return to my roots with a global perspective. It’s where Caribbean, Latin, Southern, and coastal influences collide. Where technique meets soul. Where street food energy meets chef-driven execution.
Every dish we serve is a reflection of that journey—bright, bold, and built to make an impression.
